  • 150 gms – 5 oz. ginger marmalade or normal marmalade
  • 175 gms – 1 ½ stick butter softened
  • 175 gms – 1 cup minus 1 tbsp light muscovado sugar I used brown sugar
  • 3 large eggs beaten
  • 225 gms – 1.8 cups self-raising flour
  • 1 tsp baking powder
  • 2 tsps ground ginger
  • 1 tsp mixed spice
  • 100 gms – 3.5 oz. walnuts roughly chopped
