- 175 gms – 1 ½ stick butter softened
- 175 gms – 1 cup minus 1 tbsp light muscovado sugar I used brown sugar
- 3 large eggs beaten
- 225 gms – 1.8 cups self-raising flour
- 1 tsp baking powder
- 2 tsps ground ginger
- 1 tsp mixed spice
- 100 gms – 3.5 oz. walnuts roughly chopped
