Stir Fry Recipe with Frozen Vegetables

Ingredients
- 2 tablespoons olive oil
- 1 medium onion diced
- 1 lb chicken breast diced
- 24 oz frozen vegetables I used Birds Eye Steamfresh Asian Medley, Asian variety
- 1/2 cup water chestnut optional
stir fry sauce-
- 1/2 cup chicken stock
- 1/4 cup sweet chile sauce
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon dried ginger
- 1/2 tablespoon corn starch
- salt to taste*
- black pepper
Instructions
- In a large, nonstick skillet, heat olive oil over medium high heat.
- Add in onion and chicken and cook 3-5 minutes or until browned and cooked thoroughly.
- Stir in frozen veggies (and water chestnuts if using) and heat through.
- For the sauce, whisk all ingredients together until smooth.
- Pour sauce over chicken and veggies and bring to boil to thicken. Serve over rice or noodles.
Notes
- Taste the stir fry sauce before adding additional salt since soy sauce already adds saltiness.
- Use low-sodium soy sauce to better control the salt content in the dish.
