Stovetop Maple “Baked” Beans

In the photo, I've served the beans with as close to an English breakfast as I can manage with a [tofu scramble|http://thevietvegan.com/2014/02/20/tofu-scramble/], sautéed mushrooms, and some rye toast.

Ingredients

  • 1 cup Navy beans picked through and soaked overnight, dried
  • 1/4 cup maple syrup
  • 1/4 cup ketchup
  • 3 tbsp dark brown sugar
  • 2 tbsp tamari
  • 1/4 tsp liquid smoke 3 squirts
  • 1 tsp Worcestershire sauce vegan

Instructions

  1. Rinse the soaked navy beans and cover with at least 2 inches of water in a large pot.
  2. Bring to a boil, then lower to a simmer to cook for at least 30 minutes, until beans are tender. Drain and transfer back to pot. Add maple syrup, ketchup, dark brown sugar, tamari, liquid smoke, and worcestershire sauce and stir over low heat until flavours have melded. About 15-20 minutes.
  3. Serve immediately, or store in the fridge for later.
