Strawberries and Cream Yogurt Quinoa Parfaits

These parfaits are full of healthy proteins, sweet strawberries, and make an excellent breakfast or snack!

Ingredients

Quinoa
  • 1/2 cup quinoa, rinsed and drained
  • 1 cup water
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
Parfaits
  • 1 1/2 cups diced strawberries
  • 1 teaspoon maple syrup
  • 1 cup vanilla Greek Yogurt

Instructions

  1. Add the quinoa, water, and pinch of salt to a small saucepan and bring it to a boil. Once the quinoa starts to boil, lower the heat to low and cover with a lid. Let the quinoa simmer for 15-20 minutes or until all of the water is absorbed.
  2. Turn off the heat and stir in the maple syrup and vanilla extract. Refrigerate the quinoa in an airtight container until it is cool and you are ready to use it.
  3. In a small bowl stir together the diced strawberries and teaspoon of maple syrup. Let the berries sit for a few minutes until they start to macerate.
  4. In a jar, glass, or bowl layer start with a layer of the cold quinoa, a few spoonfuls of vanilla yogurt, and top it with a few spoonfuls of strawberries. Repeat the process if you want a larger parfait.
