Strawberry and Banana Bread

Strawberry banana bread that is moist, flavorful and turns out every single time! Smooth texture with small chunks of strawberries, this strawberry banana bread will be a family favorite for sure.

Ingredients

  • ½ cup butter 1 stick
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon almond extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 bananas ripe
  • 1 cup strawberries diced

Instructions

  1. Preheat oven to 350 degrees F. 
  2. Cream butter and sugar together for 1-2 minutes. 
  3. Add 2 eggs and cream together again for 1-2 more minutes until it's light and fluffy. 
  4. Add the almond extract and mix in thoroughly.
  5. Add the dry ingredients and mix until almost combined but there are still streaks of flour in the batter. 
  6. Add the bananas whole and mix until broken up and combined in the dough. About 30 seconds.
  7. Add the strawberries and mix until evenly distributed. About 30 seconds. 
  8. Pour into a greased loaf pan (see note) and bake for 45-50 minutes, or until a toothpick comes out with a few crumbs on it. 

Notes

  • I use a standard size loaf pan - 9 in x 5 in. If you have 2 smaller pans, that is also fine. Just adjust the baking time by about 15 minutes.
