Strawberry and White Chocolate Muffins

Delicious homemade fresh strawberry and white chocolate chip muffins are great for breakfast and party gatherings.

Ingredients

Batter Mixture:
  • 2 cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 stick butter (½ cup) melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup & 2 tablespoons milk
  • 16 pieces strawberries (13 oz, after cutting it will be 12 oz (2 cups), make sure to have 2 cups of chopped strawberry)
  • ¾ cup white chocolate chips (Total of 5 oz, ½ cup (3oz) put into the batter mixture, ¼ cup (2oz) sprinkle on top of the muffin batter before baking.)
Topping Crumbs:
  • ½ cup all purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup white sugar
  • 1 teaspoon cinnamon powder
  • ½ stick butter (¼ cup) melted

Instructions

  1. Soak 16 strawberries (13 oz) for 10 minutes and wash it 2-3 times. 
  2. After that, remove the leaves and cut them into pieces. (The chopped strawberry is around 2 cups, 12 oz.)
  3. Put 1 stick (½ cup) of butter into the bowl. Then, melt the butter in the microwave for 10-20 seconds. Mix it and make sure it is completely melted because it is easier to mix the flour batter.
  4. In a mixing bowl, put 2 cups of all purpose flour.
  5. Then, add 1 cup of regular white sugar, ½ teaspoon of salt and 2 teaspoons of baking powder. Mix it very well. 
  6. The following step, crack 2 large eggs (4 oz) into the flour mixture.
  7. Add 1 teaspoon of vanilla extract, ½ cup & 2 tablespoons of milk and the melted butter from step 3 into the flour mixture.
  8. Mix it well and the best is to use an electric mixer because the batter is thick
  9. Next, add the chopped strawberries from step 2 into the batter mixture.
  10.  Pour ½ cup (3 oz) of white chocolate chips into the batter. 
  11. Fold the fresh strawberries and white chocolate chips into the batter and mix it well. 
  12. For the topping crumbs, put ⅓ cup of brown sugar, ⅓ cup of white sugar, ½ cup of all purpose flour and 1 teaspoon of cinnamon powder into the bowl. Mix it well. 
  13. Then, melt ½ stick (¼ cup) of butter in the microwave for 10-20 seconds. Pour the melted butter into the topping mixture.
  14. Use the fork to mix the topping crumbs well. 
  15. Place the 16 cupcake liners into the cupcake tray. (You need two cupcake trays because it can make 16-18 muffins.)
  16. Scoop 2 tablespoons full of batter mixture into the cupcake liners. 
  17. Sprinkle a tablespoon of the topping crumbs from step 14 on the muffin batter.
  18. Also, sprinkle ¼ cup (2 oz) of white chocolate chips on top of the muffin batter.
  19. Lastly, preheat the oven at 375 F, bake at 375 F for 16-18 minutes. 

Notes

  • Melt butter in the microwave for 10-20 seconds, make sure it is completely melted because it is easier to mix the flour batter. 
  • Mix the dry ingredients first, then add the liquid ingredients and mix it well. 
  • The batter is thick. Therefore, it is better to use an electric mixer to mix the batter. 
  • Then, put the chopped fresh strawberries and white chocolate chips into the batter. Use a spatula to fold and mix the ingredients with the batter.
  • For the topping, put the dry ingredients, flour, sugar, brown sugar and cinnamon into the bowl and mix it well. Then, pour the melted butter and mix it well. 
  • You may have extra topping crumbs. If you do, put them in a glass container or ziplock bag and save it for next time.
  • After baking the muffins, put them on a wire rack and let it cool off a little bit before eating.
