Strawberry Arugula Salad with Watermelon and Feta

Ingredients
- 8 cups arugula
- 3 cups watermelon portioned with a melon baller or chopped into ½ inch pieces, seedless
- 3 cups strawberries , sliced
- ¼ red onion , thinly sliced
- ½ cup basil chiffonade (optional, fresh
- ½ cup feta cheese crumbled, or more to taste
- ¼ cup almonds sliced
- ⅓ cup extra virgin olive oil fruity
- 1 ½ tablespoons balsamic vinegar
- 1 teaspoon sugar or honey, plus more to taste
- ¼ teaspoon kosher salt freshly ground
- ¼ teaspoon black pepper freshly ground
Instructions
- In a large bowl, add the arugula, watermelon, strawberries, red onion, basil, feta cheese, and almonds.
- in a small bowl whisk the olive oil, balsamic vinegar, sugar or honey, and salt and pepper. Taste for sweetness and add more honey or sugar to your taste. Drizzle half of the dressing over the salad ingredients, reserving the rest and adding more if desired, then gently toss. Taste for seasoning and serve.
