Strawberry Balsamic Dressing (Oil-Free)
Refreshingly sweet and ready in just 5 minutes! A great way to liven up salads, especially in the summertime when strawberries are in season.
Ingredients
- 5 oz. strawberry about 1 heaping cup, fresh, hulled
- 1/4 cup balsamic vinegar
- 1 Tbsp. pure maple syrup (or less)
- 1 1/2 tsp. Dijon mustard
- 1-2 tsp. poppy seeds (optional)
- 1/8 tsp. salt
Instructions
- Add all ingredients (except poppy seeds) to a high-speed blender. Blend until smooth.
- Stir in poppy seeds, if using.
Notes
- Storing: Store in a sealed jar or airtight container in the fridge. I find it keeps for about 4 days.
- Yield: Recipe makes 1 cup dressing.
- Creamy version: Stir in up to 5 oz. vegan yogurt (plain & unsweetened) for a creamier consistency.
