Strawberry Basil Chickpea Salad Sandwich

This Strawberry Basil Chickpea Salad Sandwich makes a tasty (and portable!) lunch for work, school, or home. Even better? It's quick, easy, and healthy too!

Ingredients

FOR THE SALAD:
  • 15 oz canned chickpeas, drained + rinsed
  • 1-2 stalks celery chopped
  • ½ cup chopped strawberries or add extra!
  • ½ cup chopped honey crisp apple
  • ¼ cup store bought or homemade mayonnaise vegan or regular
  • 1-2 tsp Dijon mustard
  • 1 tsp yellow mustard
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 TBSP unsalted roasted sunflower seeds
  • 3-4 TBSP fresh chopped basil plus extra to taste
FOR THE SANDWICH:
  • bakery croissants or multi-grain sandwich bread
  • spinach, arugula, or romaine lettuce
  • extra basil as desired
SANDWICH SPREAD OPTIONS
  • mustard
  • mayo
  • hummus

Instructions

  1. Drain and rinse your chickpeas and add them to a large bowl. Mash with a potato masher or fork until texture appears flaked, almost like tuna salad. You could also use a food processor as a speedy shortcut - it works GREAT!
  2. Chop your berries. You can use 1/2 cup or extra if desired. Peel apple and chop out 1/2 cup, approx. 1/4 the apple. (scarf the remainder as a snack!)
  3. Add mayo, dijon, yellow mustard, salt, and pepper to your chickpeas. Stir well to coat.
  4. Fold in celery, apples, berries, sunflower seeds, and basil (as much or as little as you'd like) and adjust any ingredients or seasoning to taste.
  5. Pile high on bread with all your sandwich fixings or enjoy as a wrap, with crackers, on a salad, or simply dive into the bowl spoon-first - anything goes!
