Ingredients

Strawberry Puree
  • 2 cups strawberries hulled and halved fresh
  • ¼ cup granulated sugar
Strawberry Brownies
  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • ¼ cup freeze-dried strawberry powder see Notes
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt Morton brand
  • 1 cup unsalted butter melted and cooled
  • 4 egg large
  • ½ cup Strawberry Puree from above
  • 1 teaspoon vanilla extract pure
Strawberry Glaze
  • 2 cups powdered sugar
  • 2 tablespoons Strawberry Puree from above
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract pure

Instructions

Strawberry Puree
    Cup of Yum
  1. Add strawberries and granulated sugar to a blender or food processor and process until completely smooth. Set aside.
Strawberry Brownies
  1. Preheat oven to 350°F and lightly spray a 9” by 13” baking pan with nonstick baking spray - or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, freeze-dried strawberry powder, baking powder, and salt.
  3. In a small bowl, whisk melted butter, eggs, strawberry puree, and vanilla extract. If desired, add a drop of red food coloring.
  4. Gradually add wet ingredients to dry ingredients, stirring until just combined.
  5. Transfer brownies batter to prepared pan and smooth into an even layer. Bake 20-25 minutes, or until a toothpick inserted into the center comes out just clean. Remove pan from oven and set on a rack to cool completely.
Strawberry Glaze
  1. In a small bowl, whisk all glaze ingredients until well combined. Glaze should be thick yet spreadable – if it's too thick, add a small splash of milk. If too thin, add a bit more powdered sugar.
  2. Pour glaze over the cooled brownies and then place pan in the fridge to chill for 2 hours, or until the glaze is set. Then slice and enjoy.
