Strawberry Caprese Salad

Strawberries replace tomatoes in this balsamic-dressed Strawberry Caprese salad. Serve with your favourite protein for a quick, healthy dinner.

Ingredients

Balsamic Reduction
  • 1 cup dark balsamic vinegar
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
Salad
  • 2 cups fresh strawberries sliced
  • 1 cup bite sized bocconcini balls
  • 1 cup fresh basil leaves
  • 2 tablespoon extra virgin olive oil

Instructions

Balsamic Reduction

  1. In a sauce pan, bring balsamic vinegar, pepper, and salt to a boil.
  2. Reduce heat to medium and allow to boil gently until reduced by two thirds, whisking frequently.
  3. Remove from heat and allow to cool.
Salad
  1. In a salad bowl, combine strawberries, cheese, and basil.
  2. whisk olive oil into the cooled balsamic reduction.
  3. Just before serving, drizzle salad with the balsamic mixture.

Notes

  • Serve immediately at room temperature for best results.
  • For best results, remove the stems from your strawberries then cut in halves or quarters. This will help perfect the consistency of your tasty strawberry Caprese salad!
