Strawberry Cheesecake Bars

Ingredients

Crust:
  • 12 Graham crackers
  • 3 Tablespoons brown sugar
  • ½ cup butter melted
Cheesecake Filling:
  • 16 ounces cream cheese room temperature
  • ¼ cup sour cream
  • 2 eggs
  • ½ cup sugar
  • 1 teaspoon vanilla extract
Strawberry Topping:
  • 2 cups strawberries quartered
  • 1 Tablespoons sugar
  • 1 Tablespoon water
  • ¼ teaspoon salt

  1. Preheat the oven to 350 degrees Fahrenheit. Spray a 8x8 inch baking dish with non-stick spray and set aside.

  1. Add graham crackers and brown sugar to your food processor and pulse for 20 seconds. Then, add the melted butter in through the top and continue pulsing until combined. Transfer the mixture to the prepared baking dish and use your hands to press the crust down into the pan.
Strawberry Topping
  1. Add the strawberries, sugar, water and salt to a small saucepan and bring them to a boil over medium heat, stirring continuously. Then, reduce heat to medium low heat and simmer for 5-10 minutes, using a wooden spoon to help break down the strawberries; set aside to cool a bit.
Cheesecake
  1. For the cheesecake layer, Add the cream cheese, sour cream, eggs, sugar, and vanilla to a large bowl and mix with a hand or stand mixer until smooth.
  2. Scoop the cheesecake mixture out onto the graham cracker crust and smooth it out with a spatula. Then, pour the strawberry mixture over the cream cheese mixture and spread out evenly. Once evenly spread out, take a butter knife and swirl the strawberry sauce into the cream cheese.
  3. Place the pan in the oven and bake the bars for 35 minutes. Remove them from the oven and wait 15 minutes before transferring them to the refrigerator for at least 1 hour to allow them to cool completely. Slice and enjoy!

Notes

  • FRIDGE: Transfer leftovers cheesecake bars to an airtight container or tightly cover the 8x8 baking dish tightly with plastic wrap. Store in fridge for 3-4 days.
  • FREEZER: You can freeze these easy strawberry cheesecake bars too! Place them into an airtight container or wrap individually and freeze for up to 3 months.
