Strawberry Chicken Wraps

Grilled chicken, sliced strawberries, and crunchy romaine lettuce wrapped up tight in a flour tortilla. This is a perfect lunch for summer!

Ingredients

  • 1 pound chicken breast diced in 1-inch pieces, boneless skinless
  • salt to taste
  • black pepper to taste
  • 1 Tablespoon olive oil
  • 2 romaine lettuce hearts shredded
  • 1 cup strawberries sliced
  • 1 cup creamy poppy seed dressing divided
  • 1/4 cup almonds optional, sliced
  • 4 flour tortilla large

Instructions

  1. Heat oil in a large, non-stick skillet. Add the chicken, season with salt and pepper, and cook for 10 to 12 minutes, or until thoroughly cooked.
  2. Meanwhile, add the shredded lettuce, sliced strawberries, 1/2 cup of the creamy poppy seed dressing and sliced almonds in a large bowl. Gently toss to combine.
  3. Heat the tortillas in the microwave for about 10 seconds, or slightly warm.
  4. Take one tortilla and add 1/4 of the cooked chicken down the center. Drizzle with a tablespoon of poppy seed dressing. Add 1/4 of the strawberry mixture over the top of the chicken. Wrap up tightly. Repeat with remaining tortillas, chicken and strawberry mixture.
  5. Serve immediately with remaining poppy seed dressing.
