Strawberry Cream Popsicles (Vegan!)

Refreshing strawberry popsicles made right at home with simple, healthy ingredients. The perfect blend of sweet & creamy!

Ingredients

  • 13.5 oz. can coconut milk, full-fat
  • 2 cups strawberries (I use frozen)
  • 1/4 cup pure maple syrup
  • 1 Tbsp. fresh lemon juice
  • 1 tsp. pure vanilla extract

Instructions

  1. Add all ingredients to a high-speed blender. Blend for about 20-30 seconds until smooth.
  2. Pour mixture into popsicle molds (leaving a little space to allow for expansion). Add popsicle sticks, then place in freezer for about 5-6 hours, or until frozen solid.
  3. To remove the popsicles from the mold, leave them on the counter at room temperature for several minutes, or run the mold under warm water for a few seconds to help them slide out.

Notes

  • Yield: Recipe makes about 3 cups (24 ounces) of the liquid strawberry mixture pre-frozen. For my popsicle mold, this makes roughly 10 (2.5-ounce) pops. You may find it's more or less depending on your mold.
