Ingredients

Coffee Cake
  • 1 cup flour
  • 1/2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoon melted butter
  • 2 cup strawberries, sliced
Crumb Topping
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup cold butter

Instructions

  1. In a small bowl, combine flour, sugar, baking powder, salt. Set aside.
  2. In a medium bowl, combine egg, milk, vanilla, and melted butter
  3. Slowly add wet mixture to dry mixture and stir until just combined.
  4. Pour batter into a greased 8x8 baking pan
  5. Place sliced strawberries on top of batter in even layer
  6. Using pastry blender, combine flour, sugar and cold butter until crumb topping is formed.
  7. Sprinkle crumb topping evenly over top of strawberries
  8. Place pan in preheated oven (350*) and bake 30-35 minutes, or until toothpick inserted in center comes out clean.
  9. Remove and let cool for 5-10 minutes. Enjoy!
