Ingredients
- For salad
- 1 lb. baby spinach leaves
- 1 cup strawberries sliced
- ½ red onion sliced thin, small
- 4 oz feta cheese reduced fat
- For Salad Dressing
- ⅓ cup lemon juice fresh squeezed
- 2 tsps lemon zest
- 2 tsps red onion diced
- 2 TBSPs Truvia Baking Blend sweetener or 1/4 cup white sugar
- 1 tsp yellow mustard
- ½ cup extra virgin olive oil
- 1 TBSP poppy seeds
Instructions
- Toss the salad ingredients together in a large bowl, set aside.
- In a blender combine the lemon juice, lemon zest, red onion, baking blend, and mustard. Slowly drizzle in the olive oil and blend until well combined. Add in the poppy seeds and blend until just combined.
- Serve the salad with the dressing on the side, allowing guests to add as much as they like.
