Strawberry Freezer Jam
Strawberry Freezer Jam combines fresh or frozen strawberries with sugar-free alternative sweetener and low-sugar pectin to create a spreadable jam that sets quickly without cooking extensively. The inclusion of vanilla adds a subtle depth. This jam freezes well and can be stored in jars, offering a fresh fruit flavor for toast, desserts, or snacks.
Ingredients
- 2 pounds strawberries fresh or raspberries
- 1/2 - 3/4 cup alternative sweetener sugar-free
- 3 tablespoons pectin low or no sugar
- 1 cup water
- 1 teaspoon vanilla
Instructions
- Rinse off and slice strawberries. Place in a blender or food processor and pulse to the desired consistency.
- Put in a large bowl and add the sweetener. If you desire a sweeter jam add in more sweetener and less if you do not . Adjust to your taste.
- In a small saucepan add water and gently add in the low sugar pectin. Stir until completely dissolved, bring to a full boil while continuing to stir.
- Bring to a rolling, hard boil and cook for 1 minute. Pour into prepared strawberry mixture and stir until well incorporated (2-3 minutes) Then add in the vanilla.
- Pour into prepared 8 ounce jars leaving some space at the top so the jam can expand during freezing .
- Cover with lids and keep at room temperature until cool. Store in a refrigerator or freezer.
Notes
- This freezer jam keeps fresh in the refrigerator for about two weeks.
- For longer storage, freeze jars and use within one year for best quality.
- Adjust the sweetener amount based on desired sweetness, but do not reduce pectin for best set.
- Leave space at the jar tops to allow for expansion during freezing.
