Strawberry French Toast Roll-Ups

These french toast roll-ups have a crispy sugar and cinnamon exterior with fresh strawberries and whipped cream cheese in the center.

Ingredients

  • 2 tablespoons sugar
  • ½ teaspoon ground cinnamon
  • 8 lices sandwich bread crust removed
  • ¼ cup whipped cream cheese
  • 1 cup diced strawberries
  • 2 eggs
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter for cooking

Instructions

  1. In a small dish, combine the sugar and ground cinnamon. Set aside.
  2. In a shallow dish, beat the eggs with the milk and vanilla. Set aside.
  3. On a flat surface, use a rolling pin to flatten each slice of bread. Spread the cream cheese over each slice and top with 1 tablespoon of diced berries along the edge. Tightly roll up the bread.
  4. Dip each roll into the egg mixture. Sprinkle with cinnamon sugar.
  5. In a medium, non-stick skillet, melt the butter over medium-high heat. 
  6. Place the rolls 3 to 4 at a time in the skillet and cook for 3 minutes or until golden brown before flipping and cooking for an additional 1 to 2 minutes.
  7. Remove the roll-ups from the skillet and allow to cool slightly before serving.
