Ingredients

For salad:
  • 2 cups arugula
  • 1 cup quinoa cooked, tricolored variety
  • 1/2 cup strawberries sliced
  • 1/3 cup goat cheese crumbled
  • 1/4 cup mint depending on love of mint, chopped, fresh
  • 1/4 cup sprouted grains crunchy
For dressing:
  • 6 strawberry medium sized, fresh
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey

Instructions

For salad:
    Cup of Yum
  1. In a large bowl gently mix together all ingredients.
  2. Gently toss with dressing just until the salad is moistened. You can also serve the dressing on the side if desired.
For dressing:
  1. In a blender add strawberries, olive oil, balsamic vinegar, and honey. Blend on high until smooth. If the dressing is too thick simply add a bit more oil.
