Strawberry Kiwi Popsicles
These Strawberry Kiwi Popsicles combine the fresh fruity flavors of strawberries and kiwis with a hint of lemon juice and chia seeds for texture. The recipe creates distinct layered purees for a vibrant look and refreshing taste. These popsicles offer a natural sweetness and a slightly tart contrast, making them a cooling treat especially suitable for warm days. The addition of chia seeds adds a subtle nutritional boost and a slight gelatinous texture to each layer, enhancing the overall mouthfeel.
Ingredients
- 1.5 lbs strawberry whole
- 1 lb kiwi about 4 large 2
- 1 teaspoon chia seeds divided
- 2 teaspoons lemon juice divided
Instructions
- Create Strawberry Layer: Hull strawberries and add them to a blender with 1 teaspoon of lemon juice and half a teaspoon of chia seeds. Blend until the strawberries are a pourable puree. Note: If for some reason it is a thick blend that is not pourable, add a tablespoon of water and blend. All blended, it should be approximately 12 oz. Pour strawberries into a Pyrex with a pour spout, or another measuring cup with a pour spout.
- Create Kiwi Layer: Peel the kiwis and give a rough chop. Rinse out your blender and add kiwis with 1 teaspoon of lemon juice and 1/2 chia seeds and blend until it's a pourable puree. All blended, it should be approximately 12 oz. Pour kiwis into a Pyrex with a pour spout, or another measuring cup with a pour spout.
- Fill Popsicle Molds: Set up popsicle molds and pour a layer of strawberry in each then a layer of kiwi. Repeat until all fruit puree has been added to popsicle molds. Optional: Use a butter knife to put into molds and push one layer of fruit into the other to add color design in the popsicles.
- Freeze: Add molds to the freeze and let freeze for at least 4-5 hours.

- Chop fruit into smaller pieces if your blender is not powerful for smoother purees.
- Add a tablespoon of water to fruit purees if blending results are too thick to pour.
- Use a measuring cup with a spout to pour layers neatly into popsicle molds.
