Ingredients

SYRUP:
  • 200 g rhubarb chopped, 7 oz
  • 250 g strawberries chopped, 9 oz
  • ⅔ cup raw sugar
  • 2 cups water
  • Zest and juice of 1 lime
SPARKLER:
  • 60 ml syrup 2 oz, recipe above
  • ice
  • sparkling water
  • Lime for garnish

Instructions

    Cup of Yum
  1. To make the syrup place the rhubarb, strawberry, sugar and water in a small saucepan. Bring to a simmer over a medium low heat, and once simmering, reduce to low and cook for 20 minutes or until the fruit is soft and the syrup is gorgeously pigmented from the fruit.
  2. Place a fine mesh sieve over a bowl or jug and pour the syrup over the strainer and leave for 5 to 10 minutes. Don't push the fruit through the sieve otherwise it will cloud the syrup too much. Add the lime zest and juice to the syrup and leave to cool completely.
  3. To make the sparkler place the syrup in a lowball glass, top with ice and sparkling water. Garnish with a wedge or wheel of lime.

Notes

  • This gorgeous syrup will keep for 1 to 2 weeks in the refrigerator. Assuming you don't drink it beforehand!!
