Strawberry Mousse
A quick and easy recipe for homemade Strawberry Mousse with real strawberries and cream. Cool and creamy fruit treat perfect for a hot day!
Ingredients
- 4 cups strawberries , hulled
- 1 teaspoon lemon juice
- 1 cup sugar
- 1 tablespoon water 110 degrees or warm to touch, hot
- 1 teaspoon gelatin
- 1 1/2 cups heavy whipping cream , ice cold
Instructions
- Add the strawberries, lemon juice and the sugar to a food processor and puree until smooth.
- Pour the strawberry puree through a cheesecloth or sieve to remove any seeds.
- To your stand mixer add the heavy cream on medium speed, then increase to high speed until it reaches soft peak stage.
- To a small cup add the hot water and powdered gelatin.
- Stir well and let sit until gelatin is absorbed, then let cool for 2 minutes.
- Add the gelatin mixture to the heavy cream and beat to stiff peaks.
- Fold in the strawberry puree gently.
- Pour into serving glasses, top with whipped cream, mint and extra strawberry slices as a garnish.
