Strawberry Oatmeal Cookie Bites (Healthy Cookies!)
These chewy strawberry chia oat bites are basically breakfast dressed up as dessert (and we’re not mad about it). Made with whole grains, fresh fruits, and chia seeds, they're naturally gluten-free and keep you fueled for hours! Bonus: they’re ready in just 30 minutes!

Ingredients
- 3 large bananas ripe
- ½ cup unsweetened applesauce
- 1 Tbsp vanilla
- 1 Tbsp honey can sub maple syrup
- 1 ¾ cup rolled oats
- ½ cup slivered almonds
- 2 Tbsp chia seeds
- 1 tsp cinnamon
- ½ tsp ground ginger
- 8 large strawberries diced
Instructions
- Wets: Preheat the oven to 350°F (176°C). Mash the bananas into a paste, then mix in the applesauce, vanilla, and honey.
- Dries: Mix together the oats, almonds, chia seeds, cinnamon, and ginger.
- Combine: Mix the wet and dry ingredients, then gently fold in the strawberries.
- Bake: Drop spoonfuls onto a greased or lined cookie sheet (this recipe makes about 16 cookies). Bake until golden brown, about 20 minutes.
