Ingredients

  • 2 large egg beaten
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 cups flour
  • 1/2 teaspoon  baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup walnuts , chopped
  • 1 cup strawberries , chopped
  • 1/2 cup pineapple drained well, crushed

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9x5 loaf pan with baking spray.
  3. Whisk the eggs, oil, and sugar together in a large bowl.
  4. Sift together the flour, baking soda, salt, and cinnamon.
  5. Add flour mix to the wet ingredients and whisk until just a few streaks of flour remain.
  6. Add in the walnuts, strawberries, and pineapple, and stir until just combined.
  7. Add to loaf pan and bake for 50-55 minutes or until a toothpick comes out clean from the center.
  8. Cool completely on a wire rack before removing from loaf pan.
