Strawberry Popsicles

Enjoy these delicious homemade strawberry popsicles that strike a perfect balance between sweet and refreshing, with a burst of natural berry flavour that store-bought versions can't match.

Ingredients

  • 500 g strawberries fresh, cleaned, hulled and chopped (see note 1)
  • 480 g Greek yoghurt full fat preferred (see note 2)
  • 120 g honey (see note 3)

Instructions

  1. Clean and hull the strawberries and chop them in half.
  2. Combine the berries, yogurt and honey in a blender or food processor.
  3. Blend all ingredients until smooth.
  4. Pour the mixture into popsicle molds and pierce through the sticks (make sure they aren't too deep - you want to be able to hold them!).
  5. Freeze for at least 6 hours or overnight.
  6. Unmold the strawberry popsicles by running them over warm water, and enjoy!

Notes

  • Blend ingredients thoroughly to avoid ice crystals
  • Leave some space at the top of the mold for expansion
  • Use frozen if you prefer. Ensure to thaw them in the fridge overnight and drain them before using. 
  • Sub with a lower fat variety - they won't be as creamy though. You can also use dairy-free alternatives such as coconut cream, coconut yogurt (again do a taste test before pouring into molds). 
  • Sub with maple syrup, agave, monkfruit sweetener or stevia. (again - taste before you pour so you're happy with the sweetness. My best advice is to add a little at a time). 
  • Blend ingredients thoroughly to avoid ice crystals
  • Leave some space at the top of the mold for expansion
