Strawberry Quinoa Parfait
Strawberry Quinoa Parfait layers chilled cooked quinoa with Greek yogurt, almond milk, and fresh strawberries for a textured and mildly sweet dish. The inclusion of quinoa provides a nutty element and hearty bite, while the yogurt adds creaminess balanced by the natural sweetness of maple syrup. This parfait can be assembled in multiple layers, making it visually appealing and suitable for breakfast or a snack.
Ingredients
- 2 cups quinoa cooked and cooled, white
- 1/4 cup almond milk unsweetened
- 2 Tablespoons pure maple syrup divided
- 1 teaspoon vanilla
- pinch of sea salt
- 1 cup yogurt I like Stonyfield organic, plain, Greek
- 2 cups strawberries chopped
Instructions
- Cook quinoa if you haven't already. Cook 1 cup of dry quinoa according to the package directions. Allow to cool and then place in fridge to chill for a 1-2 hours. This step is best beforehand so you can prep the parfaits quickly.
- In a medium sized bowl, stir together 2 cups chilled quinoa, unsweetened almond milk, 1 Tablespoon of maple syrup, vanilla and sea salt.
- In a separate bowl combine Greek yogurt with remaining 1 Tablespoon maple syrup.
- Layer quinoa mixture, Greek yogurt and berries in a dish. Repeat layers however many times you’d like. Top with a few berries and enjoy.
Notes
- Use unsweetened almond milk or substitute with any preferred milk type.
- Sweeten with maple syrup or alternative liquid sweeteners like honey or agave if desired.
- Replace Greek yogurt with dairy-free yogurt to adapt the recipe for vegan diets.
