Strawberry Rhubarb Cocktail Recipe

Ingredients

  • 4 cups chopped fresh rhubarb or thawed frozen rhubarb
  • 1/4 cup white sugar
  • Juice of one lemon
  • 1 10-ounce can frozen Strawberry Daiquiri flavor BACARDI® Mixers
  • 1 cup 8 ounces BACARDI® Superior Rum
  • 6 cups cubed ice or to top of blender
  • Lemon wheels and fresh strawberries for garnish optional

Instructions

  1. Simmer the chopped rhubarb, sugar, and lemon juice in a saucepan over medium heat until the fruit is tender, about 5 minutes.
  2. Transfer the cooked rhubarb to the bowl of a blender and process until smooth. Allow to cool.
  3. Add the BACARDI® Mixers, rum, and ice to the blender. Blend on high until smooth.
  4. Divide the cocktails into six serving glasses. Garnish with lemon wheels and strawberries, if desired.

Notes

  • Although best served fresh, you can freeze the blended mixture in an airtight container for up to 1 month.
  • For a quick refresh, let the frozen cocktail thaw slightly, then blend again until smooth.
