Strawberry Salsa

This Strawberry Salsa is so versatile! You can literally use what you have in the pantry! One of the reasons I love Strawberry Salsa is that it's so easy!

Ingredients

  • 3 tbsp red onion finely diced
  • 3 tbsp sweet pepper finely diced
  • 1/2-1 Jalapeño finely diced
  • 2 tbsp Cilantro or parsley chopped
  • 1 quart ripe strawberries diced into small chunks
  • 2 tsp garlic grated
  • 1 juice and zest one lime

Instructions

    Cup of Yum
  1. Prepare vegetables, fairly small so that they will fit on a tortilla chip.
  2. Cut strawberries.
  3. Grate garlic and lime zest directly into strawberries.
  4. Add Lime and mix well.
  5. Juice lime into salsa.
  6. Cover and let sit for about 1 hour in refrigerator for flavors to develop.

Notes

  • Let salsa "rest" in the refrigerator, covered for at least 30 minutes to one hour to allow flavors to mingle.
  • Best if made the day it is served.
  • This is a fresh salsa. Does not lend itself to cold pack, or water bath canning.
