Strawberry Shortcake Cups
Strawberry Shortcake Cups stack layers of granulated sugar-sweetened strawberries with diced pound cake or angel food cake, topped with lightly sweetened whipped cream. Ingredients
- 1 ½ pounds strawberries sliced
- ¼ cup granulated sugar
- 8 ounces pound cake or angel food cake, about half of a cake, thawed and diced, frozen
- 1 ½ cups heavy whipping cream
- ¼ cup powdered sugar

Instructions
- Toss the strawberries with granulated sugar in a bowl and let sit at room temperature at least 30 minutes.
- Combine the heavy cream and powdered sugar in a large chilled bowl. Mix with a hand mixer on medium-low for 1 minute. Turn up to medium-high and continue mixing until thick and creamy.
- Assemble the cups by layering cubes of cake, followed by a layer of strawberries, followed by whipped cream (and mousse if using).
- Repeat the layers and top with whipped cream, a strawberry, and sprinkles if desired.
Notes
- Make the dessert in portions adjusted by container size, with about six servings from the recipe above.
- You may use homemade strawberry mousse as a richer alternative; allow extra chilling time before assembly.
- The recipe works well without mousse by relying on fresh strawberries and whipped cream for flavor and texture.
