A cookie/shortbread made from casein protein powder and coconut flour and topped with fresh strawberries and a Greek yogurt whipped cream mixture.

Ingredients
For the Cookie
- ¼ cup coconut flour
- 2 Tbsp coconut oil
- 1 scoop vanilla casein protein powder
- ½ tsp vanilla
- ½ tsp baking soda
- 1 ½ tsp stevia
- 1 egg
For the Filling
- 7 tbsp plain non fat Greek yogurt ¼ cup + 3 tbsp
- 1/3 scoop vanilla whey protein powder
- ½ tsp stevia powder
- ½ tsp vanilla
- 14 tbsp fat free whipped cream ¾ cup + 2 tbsp
- 5 strawberries
Instructions
- Preheat oven to 350°F.
- Mix the dry cookie ingredients together until incorporated. Mix the wet ingredients separately (melt the oil first).
- Combine dry and wet and mix thoroughly.
- Split the dough into 12 balls and place on a oiled baking sheet. Press into cookie form. (Note: You’ll see in the picture the cookies are in mini muffin shape. I pressed the dough into a mini muffin tin to create wells to hold the filling. It was way too much work do to this so just make regular cookies.)
- Bake 7-8 minutes.

For the Filling
- For the filling mix everything but the whipped cream in a bowl and mix vigorously. When all of the protein has incorporated, add the whipped cream and fold in gently.
- Cut the strawberries into small pieces.
- Top each cookie with the filling and strawberries once cooled.
