Strawberry Shortcake

Delicious summer dessert with a homemade biscuits, fresh strawberries and whipped cream!

Ingredients

Strawberries
  • 1 pound fresh strawberries
  • ¼ c. granulated sugar
Shortcakes
  • 3 c. all-purpose flour
  • 2 Tbsp baking powder
  • 1 tsp salt
  • ¼ c. granulated sugar
  • ¾ c. unsalted butter, very cold, cut into small pieces (1 + ½ sticks)
  • 1 c. buttermilk or heavy cream plus more for brushing biscuits
  • Coarse sugar for sprinkling on shortcakes
Homemade Whipped Cream
  • 2 c. heavy whipping cream
  • 2 Tbsp granulated sugar
  • 1 tsp clear vanilla extract

Instructions

Strawberries
    Cup of Yum
  1. Clean and slice strawberries and add to large bowl
  2. Sprinkle with sugar
  3. Cover and place in refrigerator
Shortcakes
  1. Preheat oven to 400 degrees and prepare baking sheet with parchment paper or silicone mat
  2. In a food processor, add flour, baking powder, salt and sugar ** see notes
  3. Pulse until well combined
  4. Add butter and mix until butter is broken and mixture is coarse
  5. Pour milk on top of flour mixture and mix just until the dough begins to form a ball
  6. Remove dough onto lightly floured surface
  7. Form dough into large disk
  8. Roll dough out slowly until about 1 inch thick
  9. Use a floured biscuit cutter to cut circles
  10. Lightly brush with extra heavy cream or buttermilk
  11. Sprinkle with coarse sugar
  12. Place close together on prepared baking sheet
  13. Bake for 15-20 minutes or until golden brown
  14. Remove from oven onto wire rack and cool
Whipped Cream
  1. Mix cold heavy cream, sugar and vanilla with an electric mixer fitted with a whisk until stiff peaks form, about 10 minutes
Serving
  1. Slice biscuits in half
  2. Top bottom with whipping cream and strawberries
  3. Add top and more whipping cream and strawberries

Notes

  • Food Processor: You can also use a pastry cutter or fork to cut butter into flour mixture.
  • You can use frozen strawberries, just sprinkle with sugar and let thaw in refrigerator. If you have already sweetened frozen strawberries lessen the sugar or skip it all together. 
  • A shortcut for the homemade whipped cream is to buy whipped topping.
  • Food Processor: You can also use a pastry cutter or fork to cut butter into flour mixture.

  • If you don't have a biscuit cutter to make the biscuits you can use the rim of a glass jar to cut them.
