Ingredients
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1/4 cup extra virgin olive oil
- 2 tablespoons Lemon Lemon Juice
- 1 pound penne pasta
- 4 cups baby spinach
- 3 cups strawberries sliced
- 1 cup crumbled feta
- 1/2 cup sliced almonds
- 4 tablespoons balsamic glaze for drizzling
Instructions
- Cook pasta one minute shy of the package directions.
- Whisk together the salt, pepper, olive oil, and lemon juice in a large bowl then add in the pasta and combine.
- Add spinach, strawberries, feta and almonds and toss gently until combined.
- Drizzle with balsamic glaze and serve.
