Ingredients
- 10 ounces Baby Spinach Leaves or Mixed Greens
- 6 Slices of Crispy Bacon (cut into bite-size pieces)
- 1/4 red onion (thinly sliced)
- 1 lb. strawberries (sliced)
- 3/4 cup feta cheese crumbles
- 3/4 cup walnuts
Sweet Poppyseed Dressing:
- 1/2 cup mayonnaise
- 3 Tablespoons apple cider vinegar
- 3 Tablespoons sugar
- 1 Tablespoon grated onion
- 2 teaspoons Dijon mustard
- 1 Tablespoon poppyseeds
- salt and pepper to taste
Instructions
- Cook bacon until crispy and cut into bite-size pieces.
- In a large salad bowl, toss baby spinach or mixed greens, bacon, red onion, strawberries, feta cheese, and walnuts.
- In a bowl or mixer bottle, mix the mayonnaise, vinegar, sugar, onion, dijon mustard, and poppy seeds together. Add salt and pepper if needed.
- When ready to serve, toss salad with dressing.
