Strawberry Spinach Salad with Strawberry Dressing
This Strawberry Spinach Salad combines fresh spinach, sliced strawberries, avocado, red onion, feta cheese, and pecans. It is dressed with a homemade strawberry dressing made from pureed strawberries, olive oil, balsamic vinegar, honey, and Dijon mustard, creating a fruity and tangy complement to the crisp salad ingredients.
Ingredients
For the strawberry dressing:
- 1 cup strawberries chopped
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- salt to taste, kosher salt and freshly ground
- black pepper to taste, kosher salt and freshly ground
For the strawberry spinach salad:
- 8 ounces spinach fresh
- 2 cups strawberries sliced
- 1 avocado sliced, large
- 1/4 red onion thinly sliced
- 2/3 cup feta cheese crumbled, or goat cheese
- 2/3 cup pecans roughly chopped candied or regular
Instructions
- To make the dressing, add the strawberries, olive oil, vinegar, honey, mustard, salt and pepper to a blender. Blend until smooth. Set aside.
- To assemble the salad, place the spinach, strawberries, avocado, red onion, cheese, and pecans in a large bowl. When ready to serve, drizzle with dressing and toss. Alternatively, you can plate the salads and serve the dressing on the side.
Notes
- Candied or regular pecans can be used depending on preferred sweetness and texture.
- Cooked crumbled bacon can be added for a savory contrast.
- Almonds, walnuts, or pistachios may replace pecans as alternative nuts.
