Strawberry Streusel Bars
Homemade pastry made easy! Juicy strawberry preserves and marmalade layered into a shortbread crust make these Strawberry Streusel Bars one of the tastiest treats to come out of my kitchen.
Ingredients
For the crust
- ¾ cup butter melted, unsalted
- 1 cup powdered sugar
- 2 ½ cups all-purpose flour
For the filling
- 1 can almond paste 8 ounce
- ½ cup orange marmalade
- ½ cup Strawberry Preserves
For the topping
- 1 package cream cheese 8 ounce, softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine melted butter with powdered sugar and flour. Mix until crumbly. Remove 1/3 of the mixture for later.
- With the remaining crust, press into the bottom of 13x9 baking dish.
- Carefully spread almond paste onto the dough using a butter knife or back or a spoon. Spread strawberry preserves on half of the crust, and orange marmalade over the over half.
- In a mixer, beat cream cheese with powdered sugar, and vanilla extract. Once smooth, spoon into a pastry bag (I used tip 48, but any tip will work). Pipe diagonal lines onto the top of the filling. Sprinkle with reserved crust mixture.
- Bake in a 350 degree F oven for 30 minutes. Remove and cool completely.
- Cut into small squares and enjoy.
Notes
- Place on a cookie sheet and in the freezer. After 30 minutes remove and slide cookie bars into ziploc bags.
- Allow to thaw in refrigerator before enjoying.
