Strawberry Waffles

Ingredients

  • 1 1/2 cups (190 grams) all-purpose flour
  • 2 tablespoons (25 grams) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • 1/2 cups (80 grams) chopped fresh strawberries
  • 2 large eggs
  • 3/4 cup (180 milliliters) buttermilk
  • 4 tablespoons (60 grams) unsalted butter melted and slightly cooled, plus more for greasing the waffle iron
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat waffle iron according to manufacturer's instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg.
  3. Toss in the chopped strawberries until well coated in the flour.
  4. In a medium bowl, whisk together the eggs, buttermilk, butter, and vanilla. Mix the wet ingredients into the flour mixture until just combined.
  5. Grease heated waffle iron with butter. Add enough batter to fill the iron and cook until golden and heated through the middle. Repeat with remaining batter.
  6. Serve warm and top with desired garnishes.
