Strawberry Watermelon Rind Smoothie

Ingredients

  • 1 cup watermelon flesh 150 g
  • 1 cup watermelon rind 150 g, washed
  • 1 cup strawberries 150 g, frozen*
  • 1 Tbsp honey 15 g, sugar for vegan substitute
  • 1 tsp lemon juice 5 mL

  1. Blitz all ingredients in a blender until completely smooth. If you notice your blender isn’t breaking down the rind completely, just pour the finished smoothie through a wire mesh sieve to strain out the larger bits.

Notes

  • *For the best texture, be sure at least one of the fruits is frozen (either the watermelon flesh or strawberries) to give this smoothie its refreshing slushiness!
  • Storage: Smoothies are always best enjoyed right away. If you have leftovers, they will last for 2 days in the fridge. Reblend it with a bit of ice before enjoying again. You can also freeze it in an ice cube tray and then blend with a bit of liquid.
