Stuffed Chicken Breast

This homemade baked stuffed chicken is a delicious and versatile dish that can be made with a variety of fillings! It is hearty, savory, and incredibly flavorful. This is such a great way to make chicken breast even more tender and tasty. Great for the whole family!

Ingredients

  • 4 boneless skinless chicken breasts
  • ½ tsp salt
  • ½ tsp black pepper
  • 4 slices cheese such as mozzarella or cheddar
  • 1 cup spinach leaves washed and dried
  • ¼ cup sun-dried tomatoes chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs such as oregano, basil, or thyme
  • toothpicks or kitchen twine for securing the chicken

  1. First, preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Lay each chicken breast flat on a cutting board. Use a sharp knife to make a horizontal slit along the side of each chicken breast, being careful not to cut all the way through. This will create a pocket for the stuffing.
  3. Season the inside and outside of each chicken breast with salt and pepper.
  4. Layer a slice of cheese, a handful of spinach leaves, and a spoonful of chopped sun-dried tomatoes inside each chicken breast pocket. You can adjust the amount of filling to your preference.
  5. In a small bowl, mix together the minced garlic, olive oil, and dried Italian herbs.
  6. Brush the garlic and herb mixture over the outside of each chicken breast, coating them evenly.
  7. Use toothpicks or kitchen twine to secure the openings of the chicken breasts and hold the filling in place.
  8. Place the stuffed chicken breasts in the greased baking dish. If desired, drizzle any remaining garlic and herb mixture over the top.
  9. Bake the chicken in the preheated oven for about 25 to 30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
  10. Once cooked, remove the stuffed chicken breasts from the oven. Let them rest for a few minutes.
  11. Carefully remove the toothpicks or kitchen twine before serving.
  12. Finally, serve the stuffed chicken breasts with your choice of sides, such as roasted vegetables, salad, or mashed potatoes.
