Stuffed Mexican Chorizo Burger

These cheese stuffed Mexican Chorizo Burgers are like a south of the border version of a Juicy Lucy. Stuffed with Oaxaca cheese, and topped with pico de gallo, these seasoned burgers are sure to be a favorite.

Ingredients

  • 1 Pound ground sirloin
  • 0.5 pounds beef chorizo
  • 1 Tablespoon burger seasoning
  • 1 Tablespoon Worcestershire sauce 
  • 6 Ounce Oaxaca cheese
Toppings
  • 1 avocado
  • Pico de Gallo
  • 1 tomato Sliced
  • lettuce
  • Chipotle mayo Optional
  • 3 burger buns

Instructions

Making the cheese stuffed burger patties

  1. Combine the ground beef and beef chorizo in a medium bowl and mix to combine. Add in about 1 tablespoon of your favorite burger seasoning and 1 tablespoon of Worcestershire sauce and mix well to combine.
  2. Divide the meat into 6 equal sized balls, about 4 ounces each then form the balls into flat burger patties.
  3. Place a roughly, 1 tablespoon sized ball of cheese onto 3 of the meat patties, then top with the other 3 patties. Press the edges of the burger down to seal.
Grilling the Cheese Stuffed Chorizo Burgers
  1. Preheat your grill to medium-high heat, or about 400 degrees. If desired season the stuffed cheeseburger patties with additional burger seasoning.
  2. Grill the burgers for about 3-5 minutes per side then flip one additional time and top with cheese. Continue to cook to desired doneness.
  3. Slather the bottom bun with chipotle mayo, then add lettuce and tomato. Add the Mexican burger patty and then top with pico de gallo and avocado.
