Stuffed Mushroom Casserole

This Stuffed Mushroom Casserole layers sautéed onions, garlic, and sliced mushrooms with mozzarella and parmesan cheeses, blended with Italian-seasoned breadcrumbs. Butter is incorporated into the breadcrumbs to create a rich topping that bakes to golden and bubbly perfection. The dish offers a tender, flavorful mushroom base with a crisp, cheesy crust, suitable as a savory side or appetizer alongside a main course.

Ingredients

  • 16 oz mushroom button or cremini, sliced
  • 5 TBSP butter divided, unsalted
  • 1 cup onion finely chopped
  • 6 cloves garlic approx. 2 TBSP, smashed and minced
  • ¾ cup mozzarella cheese grated
  • ¼ cup Parmesan Cheese grated
  • ¾ cup Italian seasoned breadcrumbs
  • salt to taste (I used a pinch of each
  • black pepper to taste (I used a pinch of each
  • parsley fresh, to garnish

Instructions

  1. Pre-heat oven to 350 degrees F.
  2. Clean and slice mushrooms (or use pre-sliced for a speedy shortcut!)
  3. Bring a pan or skillet to medium-high heat with 1 TBSP of butter and sauté onion until translucent, then add garlic and mushrooms and cook until golden and tender, adding a little extra of butter (as needed) if the veggies start to stick.
  4. Transfer veggies to a baking dish and sprinkle with cheese. Use as much or as little as you'd like here.
  5. TIP: If you're using a cast iron skillet you can actually bake everything right in the skillet!
  6. Melt 4 TBSP butter and combine with seasoned breadcrumbs. Mix well to coat.
  7. Add about half the breadcrumbs to the mushrooms and stir slightly. Then top with the remainder.
  8. Bake at 350 degrees F for 10-15 minutes or until golden and bubbly
  9. Serve piping hot with your favorite main dish!

Notes

  • A spoonful of light sour cream stirred in before serving adds creaminess and complements the flavors.
  • This casserole pairs well as a side dish with stroganoff or other main meals.
