Ingredients

  • 1 black beans 15-ounce can, rinsed and drained
  • 1 corn 15-ounce can, rinsed and drained
  • 3/4 cup diced tomatoes
  • 1/4 cup green onion chopped
  • 2 teaspoons cumin ground
  • salt to taste
  • black pepper to taste
  • 2 sweet potato microwaved and cut in half, large
  • guacamole optional, for garnish
  • cilantro optional, minced for garnish

Instructions

  1. In a large mixing bowl, combine the black beans, corn, diced tomatoes, green onions, cumin, salt, and pepper, stirring until well mixed.
  2. Carefully scoop out a portion of the flesh from the microwaved sweet potatoes, creating a small well in each half, while leaving the skin intact.
  3. Spoon the bean mixture into the wells of the sweet potatoes, and if desired, garnish with guacamole and minced cilantro before serving.
