Stuffed Zucchini Boats

These Stuffed Zucchini Boats have a delicious blend of ground beef and Italian sausage, mixed with marinara sauce and topped with cheese. This easy recipe packs a punch of flavor and is a wholesome and satisfying way to use your surplus of zucchini.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/2 cup onion chopped
  • 1-2 cloves garlic minced
  • 1/2 pound ground beef
  • 1/2 pound Italian sausage casings removed, sweet
  • 2 cups marinara sauce prepared
  • 4 zucchini about 8-10 oz each, medium
  • 4 ounces mozzarella cheese shredded

Instructions

  1. Preheat the oven to 400ºF.
  2. Heat a large skillet over medium-high heat. Add the oil, and once shimmering, add the onion. Cook for a few minutes, until the onions have become translucent. Add the garlic and cook an additional minute.
  3. Add the ground beef and sausage. Cook, breaking it up as it browns.
  4. Once the meat has browned and is cooked through, stir in the marinara sauce. Cook for 5 minutes, or until the sauce is slightly thickened.
  5. While the sauce is cooking, remove the stem end of each zucchini, then cut in half lengthwise. Use a melon baller or a teaspoon to scoop the flesh out of the zucchini. Make sure to leave enough around the edges that the zucchini will still hold its shape. Place the zucchini on a baking sheet, cut side up.
  6. Once the sauce has finished cooking, spoon the mixture into each of the zucchini halves, dividing the mixture evenly between all of the zucchini. Top the zucchini with the cheese.
  7. Bake the zucchini in the preheated oven for 25 minutes, or until the cheese is melted and the zucchini is fork tender.
