Sugar Cookie Bars

These soft Sugar Cookie Bars are a fun twist on the classic sugar cookie recipe and MUCH easier to make! You'll love this chewy, buttery cookie bar topped with a layer of smooth sweet frosting.

Ingredients

Sugar Cooke Bars
  • 1 cup butter
  • 1 1/2 cups sugar
  • 3 eggs
  • 3 teaspoons vanilla
  • 3 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon cornstarch
Frosting ingredients
  • 1/2 cup salted butter
  • 1/2 cup shortening
  • 1 pound powdered sugar
  • 3 Tablespoons heavy cream (half and half works too)
  • 2 teaspoons vanilla
  • pinch salt (optional)
  • pink gel coloring
  • Sprinkles

Instructions

  1. Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper and spray with non-stick cooking spray.
  2. Cream butter and sugar together.
  3. Add eggs and vanilla.
  4. In separate bowl, combine flour, baking powder, cornstarch and salt.
  5. Slowing add dry ingredients to wet ingredients. Mix together until dough can hold together into a soft ball.
  6. Drop clumps of dough evenly around pan.
  7. Press dough down evenly with hands or spatula. Bake 25-30 minutes or until dough BARELY starts getting golden around the edges. Do not over bake!
Frosting
  1. Cream the butter, shortening and sugar together with an electric mixer.
  2. Add vanilla, heavy cream and powdered sugar. Mix for 3 minters on high.
  3. Color with 3 drops of soft pink gel coloring and blend together.
  4. Frost cooled cookie bars to give a nice thick layer of frosting and place sprinkles on top.

Notes

  • *I love to buy gel coloring from Hobby Lobby or from Amazon. It blends perfectly with the frosting and the color won't separate from the butter in the frosting as some food coloring tends to do. 
  • Store in an air tight container up to a week.  
  • I cut these bars into 12 huge bars, but this can easily be cut into 24 bars.
