Sugar Donut Muffins

We love donut holes, but hate deep frying! These donut muffins are just like donut holes thanks to the dunk in melted butter and cinnamon sugar.

Ingredients

  • 3/4 cup milk
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup melted butter for dipping
  • 1/2 cup sugar for rolling
  • 1 tablespoon cinnamon for rolling

Instructions

  1. Pre-heat oven to 350 degrees and grease mini muffin tin with cooking spray.
  2. In a large bowl beat together milk, sugar, vegetable oil, and egg until well combined.
  3. In small bowl, mix together flour, baking powder, salt, and nutmeg. Add the dry ingredients to the wet ingredients and stir to combine.
  4. Pour into muffin tins, filling each about 3/4 full.
  5. Bake for about 15 minutes or until tester comes out clean.
  6. Melt the butter in a small bowl in the microwave.
  7. Stir together sugar and cinnamon in another small bowl.
  8. When the muffins are done allow to cool for a few minutes, until you are able to handle them easily.
  9. Dunk the tops of each muffin into the melted butter and then the cinnamon sugar. Set aside to cool.

Notes

  • Store at room temperature for 3-4 days.
