Sugar-free Buckeyes

Ingredients

  • 1 cup peanut butter (or alternative nut or seed butter)
  • 1 cup almond flour
  • ¼ cup low-carb sweetener powdered
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • 1 tbsp coconut oil
  • salt a pinch

Instructions

  1. In a bowl mix together peanut butter, almond flour, sweetener, vanilla extract salt. Mix well until the ingredients are combined.
  2. Prepare parchment paper on cutting board or baking sheet. Form the mixture into small balls about 1 inch in diameter.
  3. Arrange them on the baking paper and then place in fridge for about 1 hour to chill.
  4. Melt the chocolate and coconut oil in the top of a double boiler or over very low heat in a small saucepan.
  5. Once melted, use fork or wooden skewers to lower the balls into chocolate, covering 2/3 of the ball in chocolate.
  6. Let sit on the parchment paper for at least 5 minutes to set, then either transfer to the fridge for at least 30 minutes or place on a cooling rack to set.

Notes

  • If you choose to use a different nut or seed butter instead of peanut butter, you'll likely want to increase the sweetener because peanuts have an inherent sweetness to them.
