Sugar Free Christmas Cookies(German Cinnamon Stars)

These Sugar Free Christmas Cookies, inspired by German Cinnamon Stars, use almond flour, egg whites, cinnamon, and an optional hint of ground coffee for depth. Beaten egg whites folded with powdered sweetener create a light meringue base that, combined with the nutty almond flour and warm spices, results in soft yet sturdy cookies. The dough is chilled before cutting to ensure clean shapes, then baked and finished with a sugar-free glaze. This recipe suits those avoiding sugar without sacrificing the festive spiced cookie experience.

Ingredients

  • 2.5 cups / 250g almond flour or ground almonds
  • ½ cup / 90g powdered sweetener
  • 2 egg large, white
  • 2 teaspoon cinnamon
  • 1 teaspoon ground coffee (optional)
Sugar Free Icing
  • ½ cup / 90g powdered sweetener plus 1 tablespoon water

Instructions

    Cup of Yum
  1. Preheat the oven to 150 Celsius / 300 Fahrenheit.
  2. Beat the egg whites until they hold soft peaks. Slowly mix in the powdered sweetener until the mixture is stiff.
  3. Add the almond flour and spices and stir until combined.
  4. Form a dough ball and roll it out around ½ to 1 centimetre thick between 2 sheets of baking paper.
  5. Place in the freezer to chill for around 15 minutes. This is an important step - it makes cutting out the dough much easier.
  6. Remove from the freezer, lift the top baking paper sheet and use a cookie cutter to cut out shapes. Place on a baking tray line with parchment paper.
  7. Bake for about 12-15 minutes.
  8. Let cool completely, then ice with sugar free icing - ½ cup powdered sweetener mixed with 1 tablespoon water.

Notes

  • Substitute 100g of almond flour with ground hazelnuts for a nutty twist.
  • Chill dough before cutting to improve handling and cookie shape.
  • Net carbohydrates per cookie are approximately 1.2 grams, with each cookie weighing about 20 grams.
  • Use powdered sweetener suitable for baking to ensure correct texture in the meringue.
