Ingredients

  • 14 oz / 400g chopped tomatoes just tomatoes!, good quality, tin, or passata
  • 2 tablespoon apple cider vinegar
  • 1-2 tablespoon erythritol optional ***see notes, golden
  • 1 garlic mashed, or ¼ teaspoon garlic powder, clove
  • ¼ teaspoon Dijon mustard
  • ¼ teaspoon onion powder
  • 1 pinch ground allspice
  • 1 pinch cinnamon
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine all ingredients, cook on a low heat for 30 minutes.
  2. Stir frequently until sauce thickens.
  3. Blend with an immersion blender until smooth.

Notes

  • A single serving (one tablespoon) contains about 7g net carbs, with the full recipe yielding 12-14 tablespoons.
  • The golden erythritol is optional and improves taste; alternative sweeteners can be substituted.
  • Use fresh, peeled tomatoes by blanching and cubing for a fresher flavor, though it adds extra preparation time.
