Summer Caprese Salad made with tomatoes, peaches, cucumber, fresh mozzarella cheese, red onion, basil, and a simple balsamic glaze. This easy salad is a great side dish to any summer meal.

Ingredients

  • 3 tomato sliced, large
  • 1 pound mozzarella cheese sliced, fresh
  • 2 peach sliced, large
  • 1 cucumber sliced and cut in half, small, seedless
  • 1/2 cup grape tomatoes cut in half, or cherry tomatoes
  • 1/4 cup red onion slices
  • 1/3 cup basil fresh leaves
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • balsamic glaze for drizzling

  1. Arrange tomatoes, fresh mozzarella, peaches, cucumbers, grape tomatoes, red onion, and basil leaves on a large platter.
  2. Season with salt and black pepper, to taste. Drizzle with balsamic glaze. Serve immediately.
