Summer Cherry Tomato Salad

Bright and BURSTING with Color and Flavor!  This perfect Summer Cherry Tomato Salad can grace any table! Perfect for a late summer bumper crop OR a winter time "remembering summer" salad.  You can find good grape tomatoes nearly any time of the year!

Ingredients

  • 4 cups cherry tomato fresh and ripe, cut in half if large
  • 2 Tbs balsamic vinegar
  • 2 Tbs olive oil
  • 10 basil leaves cut chiffonade
  • 1 teaspoon sugar granulated white
  • ½ teaspoon black pepper
  • ½ teaspoon kosher salt

Instructions

  1. Cut the tomatoes in half if they are larger than bite sized.  
  2. Add the 1 Tbs Balsamic, 2 Tbs Olive Oil, Basil leaves, 1 teaspoon sugar, ½ teaspoon black pepper and ½ teaspoon kosher salt.  Mix gently, but well.
  3. Refrigerate for at least an hour to allow flavors to meld.  It's good right away too though!  Taste before serving, you may need to add more salt and pepper. 

Notes

  • Any tomato works, just cut into bite sized pieces..
  • Cutting the cherry tomatoes in half helps with the tough skin.
  • There are many ways to change up this recipe.  See a full list above!  
  • Other herbs added to this salad are fantastic, like oregano!
  • It IS important to add the sugar and salt. That gives you a nice balance of flavor that you won’t want to miss.
  • You can try other vinegars, personally,  I like the taste of Balsamic with tomatoes.  Rice Wine Vinegar would be nice, but very tart, so maybe just try half the amount to start.  
  • Apple Cider vinegar would work too - again start with half and increase to your taste.  
  • Balsamic vinegar does give a brown tint to the salad.
  • For added zip, add some small dice onions.
  • A few dices of cucumber would work too.  
  • PRO TIP: By using different colors of tomatoes, you will really add a lot of appeal to this simple tomato salad.
  • PRO TIP: To cut the basil in a chiffonade, roll the basil leaves up together and cut into small strips.  This helps release all the best flavors of the basil.
