Summer Cobb Salad is filled with fresh summer fruits and veggies. It’s loaded with grilled chicken, bacon, hard boiled eggs, avocado, goat cheese, berries, cucumber, grilled corn and tossed in a simple balsamic lime vinegar dressing. Every bite is refreshing, bright, and summery!

Ingredients
For the Salad:
- 6 cups mixed greens spring mix or chopped romaine lettuce
- 3 cups sliced chicken breast
- 8 lices cooked and chopped bacon
- 4 quartered hard-boiled eggs
- 1 ½ cups grilled corn cut off the cobb
- 2 Sliced avocados about 2 cups
- 1 cup sliced cucumbers
- 1 ½ cups fresh berries I used blackberries and raspberries
- 4 ounces crumbled goat cheese crumbled
- salt to taste
- ground black pepper to taste
Balsamic Vinaigrette
- ½ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- 3 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon dried basil
- ⅛ teaspoon ground black pepper
Instructions
- Add 6 cups mixed greens to a large bowl and top with 3 cups sliced chicken breast, 8 slices cooked and chopped bacon, 4 quartered hard-boiled eggs , 1 ½ cups grilled corn cut off the cobb, 2 sliced avocados , 1 cup sliced cucumbers , 1 ½ cups fresh berries, and 4 ounces crumbled goat cheese . Toss to combine. Season with salt and ground black pepper to taste.
- To make the vinaigrette, add ½ cup extra virgin olive oil, ¼ cup balsamic vinegar, 3 tablespoons fresh lime juice, 1 teaspoon lime zest, 1 teaspoon dijon mustard, 1 teaspoon honey, ½ teaspoon salt, ¼ teaspoon dried basil, and ⅛ teaspoon ground black pepper to a jar. Close it and shake until fully combined.
- Pour the desired amount of dressing over the salad and toss to combine. Add more dressing as desired.
